The sun is finally shining again on Cape Cod! I badly want my menu plan to include lobster rolls and grilling at the beach; but the reality is that even though the sun is shining it is only 31 degrees outside. This winter is going to go down in the books as being relentless and unforgiving; and the reason too many of us ate too much comfort food!
Last week, we did a great job sticking to our menu plan. The turkey breast with mashed potatoes was perfect for the cold weather we’ve been having. Instead of making turkey ruebens with the leftover turkey, The Texan made delicious turkey soup. I love homemade soup, don’t you?
We’re adding more plant-based meals to our menu plan this week. The Texan mentioned that he felt he was lacking in the salad area. I’m excited to hear that, I could eat a dinner sized salad every day of the week!
Here’s what’s on our simple menu plan this week:
Monday – Chopped salad with red bell peppers, avocado, tomato, mushrooms, cucumbers, and chicken.
Tuesday – Turkey Ruebens
Wednesday – Lasagna {freezer meal!} with homemade bread and salad
Thursday – Baked chicken with caramelized onions and salad
Friday – Homemade pizza with leftover caramelized onion, spinach, ricotta, and chicken
Saturday – Baked Scallops with asparagus and mashed potatoes
For a sweet treat this week, we’re enjoying Sour Cream Coffee Cake Muffins. I made them as a breakfast item, they’re perfect for enjoying in the afternoon with a dirty chai.
