Self high five for me! Last week I stuck to my menu plan everyday except for one! I didn’t make the Chicken Parm that I had planned for Wednesday because I made Lobster Mac & Cheese instead. {Recipe coming soon. Initially I’d planned to use my Three Cheese Macaroni & Cheese recipe, but decided against it because of the flavor combo with the lobster.}
Sticking to my menu plan last week, offered ample leftovers for lunches and a late dinner Saturday night for The Texan. {If you were wondering about the rugby match, they lost. Hopefully they’ll get back to winning this weekend.} I’m feeling good about not ordering take out pizza, too.
Here are my ideas for this week. I may switch up the days, but am going to try to stick to the menu plan as much as I can.
Monday: Baked Chicken Parm
Tuesday: Chicken Caesar Salad
Wednesday: Shrimp Tacos
Thursday: Buffalo Chicken Pizza
Friday: Scallops Mascarpone
Saturday: Lasagna
Sunday: Chicken Enchiladas
