I’ve been terrible about sticking to a menu plan. In my mind, we’re having this on Monday, that on Tuesday, and something or other on Wednesday. But, the day arrives and we end up having breakfast for dinner {yay!} or a not-so-great choice from the freezer.
Enough is enough.
I’m taking back my menu plan!
By taking the time to menu plan, we’ll eat better and save money. I like to keep things simple, if you’ve been reading for a while you know that none of my recipes are complicated. I’m busy, you’re busy. No one wants to spend hours in the kitchen every day getting a meal to the table. So don’t.
Choose simple things, like these Easy Weeknight Chicken Tenders.
Or make a few panini and serve Cole Slaw on the side.
Dinner doesn’t have to be complex to be good. The meal period should be focused on connecting with your family; the food is what helps to make that happen. A delicious treat helps it to last a bit longer.
Here’s what we’re eating this week – no excuses!
Monday: Leftovers {always fun to start the week off with leftovers, right!}
Tuesday: Baked chicken breasts with homemade Macaroni and Cheese.
Wednesday: Whole chicken in the slow cooker with homemade mashed potatoes and green beans.
Thursday: Burrito bowls made with the leftover chicken, black beans, brown rice, lettuce, and guacamole.
Friday: Homemade pizza. Because it’s not Friday if you aren’t having pizza!
Saturday: Homemade chili and cornbread. I may try a white bean chicken chili this week.
