It snowed {again} last night. The heavy wet stuff. Gross. I’m thrilled that it is FINALLY March, though. I do hope that by springing forward on Sunday, we’ll leave this nasty weather behind! Sigh. I’m tired of talking about the weather. Sorry, I’m sure you’re tired of hearing about it too!
In last week’s menu plan, I talked about slowing down and making real food again. Lisa Leake’s book provide great inspiration last week. Her idea for slow cooking a whole chicken breast side down resulting in a very moist chicken. The Texan commented on it right away; I’ll be making my chicken that way going forward.
As per usual, I skipped a few recipes that I had planned in lieu of others. I like to build flexibility into my menu plan. For example, last week, my original plan was to make BBQ Chicken Quesadillas with the remaining chicken, but I made individual pot pies instead. They were so delicious that I was quite pleased that I made extras; we ate them two nights in a row!
Monday: Turkey Reubens. I love the tang of sauerkraut combined with swiss cheese and sliced turkey. These sandwiches are hearty and delicious.
Tuesday: Homemade lasagna with tossed salad and homemade bread. Making bread in the bread maker is simple and easy! My bread maker has a timer which allows you to put the ingredients in and the bread will be finished in time for dinner. Genius.
Wednesday: Wing Wednesday. Now that college football season is over, we’ve gotten away from our weekly Saturday night wing meal; and I miss it. So for now, we’ll have Wing Wednesday.
Thursday: Homemade Chicken Tenders and Mac and Cheese. Mac and Cheese was one of last week’s items that didn’t get made.
Friday: Leftover Lasagna and salad. I should probably make another loaf of bread, too.
Saturday: Homemade Pizza with salad.
Sunday: Shrimp Scampi with salad.
Notice the salad theme creeping in again? I need to make a more conscious effort to have salad nightly. I do get my greens in my morning smoothie, but salads are so good. Why not eat them regularly? So, what’s on your menu plan this week?
