Hello Friends! I disappeared for a few days and it has been wonderful. I love disconnecting and reconnecting. Taking time to enjoy the season – the endless heaps of wrapping paper, plates of cookies, and a few adult beverages are great for the soul.
But too many cookies and too many beverages make it easy to stray from your grocery budget. My waistline is reminding me of this fact. So, effective January 1, we’re getting back on the healthy eating wagon. No more indulging daily; no more excuses. This week’s meal plan will reflect this recommitment a bit. It won’t be too hard, but it won’t be all that easy either.
For 2014, I’m going to make a few changes to how I menu plan – I’m going to include lunches, and I may share those lunches here. I want to stick to our grocery budget – December was a bit of a fail in that regard as I forgot to keep my receipts. Oops! Food is one expense that we can control, yet we’ve let it fly out of hand a bit. Time to pull it back in.
Monday: Homemade Buffalo Chicken Wings
Tuesday: New Year’s Eve Tradition – Homemade Chinese Food Do you have a traditional meal on NYE?
Wednesday: Wild Rice Salad with Chicken Breast The original recipe calls for crispy chicken breast fillets, but I’m going to use grilled chicken breasts.
Thursday: Turkey Tacos
Friday: Homemade Pizza. For Christmas, we received a bread maker (yay!) and I am excited to try making our own pizza dough with it. Any tips?
Saturday: Florentine Lasagna Rolls These are so delicious – I’ve made them as a “bake” with penne pasta instead of rolling them up and they were just as good. Preparing it that way can be a time saver.
Sunday: Leftovers, Oven Roasted Chicken, or Turkey Reubens with Wickles Hoagie & Sub Spread instead of 1000 Island Dressing.
