Hello, hello, hello! Happy St. Patrick’s Day! Are you wearing green today? I remembered, shamrock socks and a green tank.
We’d did a fantastic job last week of sticking with our menu plan. The Texan tried to sway me into not cooking on Saturday night, but I didn’t give in. I will confess that we did not have leftovers or chicken pot pie on Sunday, instead we made Chinese food – with a little help from Trader Joe’s.
Here’s what we’re eating this week:
Monday – Turkey Reubens. No one in our house likes corned beef, this is our non-traditional St. Patrick’s Day meal!
Tuesday – Taco Tuesday! We make ours with ground turkey. A bit lighter and healthier, and once you add spices and salsa it is most delicious!
Wednesday – Lobster Mac and Cheese
Thursday – Whole Roasted Chicken with mashed potatoes
Friday – Homemade pizza – we’ll use the leftover chicken from Thursday night, caramelized onions, ricotta cheese, and maybe spinach? Yum. I wish it was Friday already!
Saturday – Trying something new! I need inspiration for Saturday night. What should we eat?!
Sunday – Chicken Wings
