Hello Friends!
I’ve missed you! Spending last week with my mom was fun, relaxing, and crazy! I’ll tell you all about it in another post. I’m excited to get back to a routine, though it is summer and our routine is more relaxed this time of year. We’ve had many late nights and ice cream cones already! I hope you are kicking off your summer celebrating by making a lot of great memories with your family. After all, life is about the moments not the material goods.
This week’s menu plan is going to be simple and full of items quickly prepared. My kitchen is super clean right now, and by not using it I’m hoping it will stay that way!
Monday – Chicken salad sandwiches {I grilled chicken breasts on Sunday night and there is plenty left over for dinner tonight!}
Tuesday – Rugby night, while we typically grab whatever, there isn’t much to grab. I’m going to make a simple Shrimp Stir Fry. It’s quick and easy.
Wednesday – Grilled Mahi Mahi with veggies. The Texan loves Mahi Mahi and it holds up well to grilling.
Thursday – Rugby night, I think I’ll make a batch of my Jamaican Grilled Chicken Wings and actually cook them on the grill.
Friday – Pizza
Saturday – We’re headed to a birthday party! It’s a pig roast, which I’m a bit freaked out about, here’s to hoping there is something other than a giant pig.
Sunday – Steaks on the grill – grass fed beef for The Texan and tuna for me!
Do you menu plan in the summer months? I find it hard to stick to a menu plan with all of the fun activities that go on late into the night, but we need to eat, right? Is your family more grab-and-go in the summer? I’d love to find a few meals that are quick to prepare but taste delicious too!
