Last week, we did a fair job sticking to our menu plan. We only missed two nights. I don’t remember why we missed Wednesday night’s planned meal, but Sunday was due to a late rugby match.
What I’ve learned with menu planning is that I need to have items on hand for a “quick dinner” when we are running late. Yesterday was a great example. We left the house at 9:15am and didn’t get home until 6:45pm. How’s that for a busy Sunday?! It would have been great if there was something in the freezer ready to go; instead, we had to stop at the store and grab a few things.
This morning, while I worked on the menu plan and write out the grocery list, I remembered that Whole Foods Market is running a special on Bell & Evans frozen chicken tenders this week. I added those to the list as “safety items” just in case things get crazy this week. I’m not a huge fan of chicken tenders, but they’ll work in a pinch.
Here’s what my Menu Plan looks like this week:
Monday: Turkey Reubens There is something about the combination of melty swiss, oven roasted turkey, and rye bread that I can’t get enough of.
Tuesday: Taco Tuesday
Wednesday: Vegetarian Lasagna
Thursday: Leftover Lasagna
Friday: Homemade Pizza
Saturday: Yep, you guessed it. Chicken Wings
Sunday: Oven Roasted Chicken
While shopping today, I bought the ingredients to make these yummy chocolate chip cookies, too.
