Did you have an extended weekend, too? We enjoyed the extra family time today at the pumpkin patch and swinging by the shoe store to get some new sneakers for The Boy. As the routine starts up again, I’m planning easy meals to ease back into things…and because I’ll be traveling this week to check out the new Toyota line up! (More on that another day!)
When thinking about easy meals, my first thought is breakfast for dinner. But, The Texan thinks that’s weird and won’t eat it. Crazy, right? I mean who doesn’t like pancakes and bacon at night? Here’s what I’ve come up with instead:
Monday: Oven-roasted Chicken served with pasta…and maybe we’ll have these Goolishly Good Chocolate Shakes.
Tuesday: Chicken fingers and fries
Wednesday: Spinach and cheese tortellini
Thursday: Turkey Tacos
Friday: Homemade pizza with pesto, caramelized onions, and chicken.
Saturday: College Football Chicken Wings
Sunday: Homemade Lasagna
