Four more days until my next Half Marathon! Exciting, right? I’ve been spending my days running [but not too far or too fast] and eating [but not too much and NOTHING new or different!]. It’s a nice pattern, really.
Wake up. Run. Eat. Shower. Eat. Work a little. Eat. Pick up The Boy at School. Eat. Walk Charlie. Eat. Make Dinner. Eat. Get The Boy ready for bed. Eat.
You can guess that I’ve been thinking about food a lot lately. Fueling my body well is important; especially when I’m hungry all. the. time. Since we’re heading into Memorial Day weekend, I thought it would be a great time to whip up some Red, White, and Blue Potato Salad.
Potato Salad is my favorite side dish for summer meals. I’m looking forward to making it often this summer!
As the weather warms here, it’s nice to have a refreshing beverage that isn’t water! I’m making a pitcher of my delicious Cucumber Blackberry Sparkler.
