Summer was becoming a distant memory until I found out one of our favorite films was released to DVD on December 8, 2015. Which one? Minions© 2015 Universal Studios. All rights reserved. Of course! We saw the film in the theater AND at the Drive-In [how cool is that?!]. My heart filled with joy when I remembered how much fun we had each time we saw it. Illumination Entertainment did a wonderful job with Despicable Me and Despicable Me 2, and they certainly did not disappoint with the Minions movie. Am I right?! I knew that it would be the perfect movie for a much needed family movie night during this busy holiday season. Taking time to slow down and have a good laugh is especially important this time of year. We all know how silly those minions are, so I decided to be a little silly with our movie night treats, too! This easy Whoopie Pie recipe is a perfect fit!
Easy Whoopie Pie Recipe
Making a Whoopie Pie is as easy as pie – because they’re not pies at all! A Whoopie Pie is sort of like a sandwich cookie that tastes like Devil’s Food cake with this delicious marshmallowy filling. Hard to describe, kinda like a minion.
Ingredients for these delicious whoopie pies:
For the Cookies
2 cups all-purpose flour
½ cup unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1 cups sugar
6 tbsp. unsalted butter, room temperature
3/4 cups milk
1 tsp. baking soda
2 tsp. vanilla extract
1 egg
For the Filling
6 tbsp. unsalted butter, room temperature
1 cup confectioners’ sugar
1 jar marshmallow creme
1 tsp. vanilla extract
food coloring, optional
Start by preheating your oven to 350 degrees. Spray Whoopie Pie pan(s) with non-stick spray or line a baking sheet with parchment paper.
In a small bowl, combine flour, cocoa powder, baking soda, and salt. Set aside.
In bowl of stand mixer, combine sugar and butter until light and fluffy.
Add the egg and vanilla, beating well.
With the mixer on low, add 1/3 of the flour mixture followed by 1/3 of the milk to the sugar/butter mixture. Repeat this process until you’ve fully combined the flour and the milk into the sugar/butter mixture.
Drop heaping spoonfuls into prepared Whoopie Pie pan, use the back of a spoon to smooth the tops of the cookies.
Bake 12-14 minutes, until the tops spring back slightly when touched.
Immediately remove from pan and cool completely on wire rack.
To Make the Filling:
With mixer set on medium speed, beat butter until smooth.
Reduce speed to low, and slowly add confectioners’ sugar.
Beat in marshmallow cream and vanilla extract [and food coloring, if using].
To Assemble:
Take one cookie and spread a thick layer of filling on the flat side of the cookie. Top with second cookie.
The Whoopie Pies can be stored, covered, in the refrigerator for several days.
