Serving made from scratch meals every night of the week isn’t always a reality. Taking a little help from Campbell’s Soups for Cooking makes it possible to make a real 30 minute meal for my family on the busiest nights of the week.
I’ve mentioned before that The Texan coaches college rugby and with that commitment comes crazier weeknights for our family. Winter weeknights are great, because I can make virtually any meal for dinner because time is not a premium. Now that it’s Spring and the rugby season is starting again, most weeknights are hectic around here.
Rather than stress about the time that I do not have, I plan ahead to ensure my family has a real home cooked meal every night in under 30 minutes. Part of this plan includes pre-cooking several boneless chicken breasts that are lightly seasoned with freshly ground sea salt and rainbow peppercorns.
Boneless chicken breasts are versatile and can be easily incorporated into several easy weeknight meals. Cooking a batch takes 15 – 20 minutes. Let the chicken cool then refrigerate until you’re ready to use it.
While shopping at Walmart last week, I noticed Campbell’s Soups for Cooking in the canned soup aisle.
I did a little happy dance. The Creamy Herb & Garlic with Chicken Stock is a great substitute for Cream of Chicken soup, and I knew it would make the perfect sauce for Chicken and Spinach Linguine.
Chicken and Spinach Linguine
I filled a pot with water, turned the heat on high to boil and immediately put the linguine in. Make sure to heavily salt the water as that helps to flavor your pasta and add oil to the pot to prevent the linguine from sticking together. While that was working away, using the same pan that I made that batch of chicken breasts, I added the previously cooked chicken and a half a bag of frozen spinach.
Our freezer is typically packed with frozen spinach, bell peppers, peas, and fire roasted corn. Keeping a variety of frozen vegetables on hand helps me whip up delicious meals in just a few minutes.
Once the spinach and chicken were warmed a bit, I added some of the Creamy Herb & Garlic with Chicken Stock to the pan. While that was heating through, I drained my pasta. I don’t rinse my pasta as I find the sauce sticks to the pasta better.
Add the linguine to the pan and use a wooden spoon to combine.
Stir in a bit of parmesan cheese and enjoy!
Tuesday nights are busy around here as The Boy has piano and The Texan is heading off to rugby. On Tuesday, I reach for more of that precooked chicken breast and usually throw together a salad. While it is a quick and easy meal, it doesn’t get rave reviews. This week, I changed things up a bit.
Sweet Onion Chicken with Brown Rice
Another thing I keep in my freezer is cooked brown rice. You can either cook a large batch and freeze it or purchase it already cooked in the freezer section. With brown rice and chicken ready to go, I was able to put this meal together in under 10 minutes!
Reheat the pre-cooked brown rice for one to two minutes in the microwave. While that is cooking, place the pre-cooked chicken in a saute pan over medium heat. Add Sweet Onion Soup’s for Cooking to the pan.
Cook for two to three minutes until hot.
Place the heated rice in a bowl, top with the chicken and sweet onion mixture.

- 1 cup pre-cooked chicken breast
- 1 cup frozen chopped spinach
- 1/2 carton Campbell's Soups for Easy Cooking Creamy Herb & Garlic with Chicken Stock
- 2 tbsp Parmesan Cheese, shredded
- 2 ounces linguine
- For the Sweet Onion Chicken with Brown Rice
- 1 cup pre-cooked chicken
- 1 cups pre-cooked frozen brown rice
- 1/2 carton Campbell's Soups for Easy Cooking Sweet Onion
Instructions
- For the Chicken andSpinach Linguine:
- Boil pot of water and cook linguine as directed on package.
- Warm chicken breast, spinach, and Campbell's Soups for Easy Cooking Creamy Herb & Garlic with Chicken Stock in saute pan over medium heat.
- Add linguine and parmesan cheese, stirring to combine.
- Serve and enjoy!
- For the Sweet Onion Chicken with Brown Rice:
- Warm brown rice in microwave following package instructions.
- Warm chicken breast and Campbell's Soups for Easy Cooking Sweet Onion in sauce pan over medium heat.
- Pour over brown rice and enjoy!
Notes
Rotisserie chicken or turkey is a great substitute for chicken in this recipe.
