WOW! Can you believe that Wednesday is here already? And that today is the LAST WEDNESDAY in OCTOBER? Where did this month go? I feel like September and October just flew right by me.
If you’re a regular reader of my blog, than you know that lately I have been in a big ol’ food rut. As The Boy gets older, he is less and less patient when I am in the kitchen making dinner. I don’t blame him, playing is more fun than working! I have been thinking about some of the fun meals that I made for The Texan back when it was just the two of us. One of our favorites was Chicken Marsala.
Chicken Marsala is a wonderful dish, it is filling without leaving you with the need to unbutton your pants. But, it involves many steps, and too much clean up. I decided that I would give it a whirl in the Crock Pot. It turned out amazing! Here’s my Easy Crock Pot Chicken Marsala Recipe:
What you’ll need:
4 Boneless Skinless Chicken Breast
1/4 – 1/2 cup flour
2 cloves garlic, minced
1 medium onion, diced
dried oregano or basil, a few liberal shakes of the bottle
Salt and Pepper, to taste
1/2 cup Marsala Wine
1/2 cup Water
One 8 ounce package of mushrooms, sliced
A few tablespoons of butter, cut into small squares
Cooking Spray
What you’ll do:
Spray the crock with cooking spray, or grease with butter if you prefer.
Season both sides of chicken with salt and pepper, place into crock pot.
In small bowl mix together flour, garlic, oregano/basil, salt and pepper. Pour flour mixture over chicken breasts.
Place butter squares on top of chicken breasts.
Add mushrooms.
Pour wine and water into crock pot.
Cook on low 4 – 6 hours depending on thickness of your chicken breasts.
You can use frozen chicken, but keep in mind that will add a bit of time to your cooking. The flour mixture coats the chicken and helps to thicken the sauce as well. You may want to brown your chicken in a saute pan before putting it into the crock pot. I do not do that. I never pre-cook anything that is going into the crock pot. To me, that defeats the purpose of using the crock pot in the first place!
I served ours over a bed of wild rice. It was delicious. You could serve it over garlic smashed potatoes or linguine. Adding a side of broccoli would be a nice touch, too. I only have one photo because I really did not expect the recipe to turn out edible at all! {Notice in my photo that you cannot see any onions. That is because I didn’t use any. As we were enjoying our meal, I realized they were missing. }

This sounds delicious! I’ve only ever had Chicken Marsala at restaurants … thought about making it myself, but it was a bit of work. This slower cooker recipe sounds right up my alley! Can’t wait to try it … thanks!
