When I think about easy weeknight meals, I often reach for pasta, veggies, and sauce. That can get repetitive causing me to reach for the phone and order pizza. While online a few days ago, I saw this amazing looking recipe for Banana Bread made with KRAFT MIRACLE WHIP.
Looks good, right? Well, that recipe started the gears in my head to spin. First off, Banana Bread with KRAFT MIRACLE WHIP sounds so interesting, but what would I do with the rest of the jar? Then it came to me, and easy weeknight Parmesan Crusted Chicken!
Chicken is a funny bird, don’t you think? If you sautee it for just a minute too long, it’s dry. If you bake it for just a minute too long, it’s dry. However, it’s an affordable protein so we just deal with the dryness. When incorporating KRAFT MIRACLE WHIP into the banana bread recipe, it makes it moist…the same had to be true with chicken. Right?
This recipe is perfect for weeknight meals during the busy holiday season.
Making Parmesan Crusted Chicken
What You’ll Need
3 – 4 Boneless Skinless Chicken Breasts
3/4 cup of KRAFT MIRACLE WHIP
1/2 cup Extra Virgin Olive Oil
1/2 cup Apple Cider Vinegar
1/4 cup Worchestershire sauce
Cayenne Pepper Sauce (optional)
1/4 cup of shredded Parmesan cheese {not the powdered stuff}
1/4 cup of seasoned breadcrumbs

What You’ll Do
For the Marinade
Combine 1/2 cup KRAFT MIRACLE WHIP, Extra Virgin Olive Oil, Worchestershire sauce and cayenne pepper sauce in a zip top bag. Close the bag and squish it around with your fingers to combine the ingredients. Once it is well combined, add the boneless skinless chicken breasts.
Let chicken marinade for at least 30-minutes.
For the Parmesan Spread
In a small bowl, combine 1/2 cup KRAFT MIRACLE WHIP and shredded Parmesan cheese. Mix well.
Preheat oven to 425. Line a baking sheet with aluminum foil and spray lightly with cooking spray.
Place chicken breasts on baking sheet. Discard remaining marinade. Using a plastic spatula, spread the cheese mixture evenly over each of the chicken breasts.
Sprinkle breadcrumbs on top.
Bake for 20 – 23 minutes.
Serve with Quinoa or Brown Rice and green beans, or your favorite sides!
