Last week’s meal plan was a flop, The Texan was unexpectedly away for work on Tuesday, Wednesday, and Thursday. I didn’t stick to the meal plan those nights, and pretty much strayed from my plan for the balance of the week too. The Boy and I had breakfast for dinner twice and Three-Cheese Macaroni and Cheese the other night. Yummy!

Monday: Tofu and Cheese Stuffed Shells (carry over from last week!)
Tuesday: Linguine with Clam Sauce (carry over #2 from last week!)
Wednesday: Chicken Caesar Salad with Garlic Bread
Thursday: Roasted Chicken with Tabbouleh and lemon-parsley asparagus
Friday: Oven-baked fish with vegetable and brown rice
Saturday: Homemade pizza
Sunday: Happy Easter! We’re going out for dinner.
