I’m a few days late sharing our menu plan this week because we’re making some changes to the way that we eat. The Texan and I following Rocco DiSpirito’s The Pound a Day Diet. While we’d both like to lose a little weight, we’re mostly doing this to get back into healthier eating habits. The Pound a Day Diet is pretty straight forward – you eat several small meals during the day, avoid processed foods and sugar, add more fruits and vegetables daily. We’re a few days in and I am loving it!
It means frequent snacks – like grapefruits, popcorn, and almond butter on toast. I love making almond butter so much, that I shared my easy recipe!
Here’s what we’re eating for dinner, and sometimes lunch the next day:
Monday – Oven Baked Chicken Breast with Garlic Mashed Potato and Salad
Tuesday – Garlic Lemon Shrimp over Linguine with Salad
Wednesday – Turkey Bacon Wrapped Chicken with Rutabaga Mash and Salad
Thursday – Oven Baked Scallops with Green Beans and Salad
Friday – Homemade Pizza with Chocolate Orange Slices for Dessert, maybe. They’re so good, how can I resist?!
Saturday – Turkey Chili
Sunday – The Big Game means wings, leftover turkey chili, and artichoke and spinach dip.

What changes are you making to eat healthier in 2014?
Sounds like a week of delicious dinners! We’re trying to eat healthier this year by focusing more on meal planning. Fewer take-out nights will help both our waistlines and our wallets!
