It’s been a while since I’ve posted my weekly menu plan for ya’ll to see. Don’t worry, we’ve been eating well despite my apparent lack of planning. We’ve used up most of the proteins and veggies that were frozen. My freezer is bare – and clean! Once I head to the store, this is what I’m planning for the week:
Menu Plan Monday – 06.06.11
Monday: Garlic Roasted Chicken with vegetables
Tuesday: Homemade Chicken pesto pizza
Wednesday: Thai Chicken Salad
Thursday: School picnic
Friday: Grilled fish, corn on the cob and brown rice
Saturday: Grilled turkey burgers, corn on the cob and cole slaw
Sunday: Grilled scallops, corn on the cob and cole slaw
I’m so glad it’s summer – I love grilled corn on the cob! If I had my way, we’d eat it every day…and this week we almost will! We use (lump) charcoal for our grilling – which is more flavorful than gas – but takes much longer to heat up. As a result, we only grill when The Texan is home to help.
