Have you ever experienced weather ruining almost a week’s worth of menu planning? I have. And it happened last week. We had a nasty cold front move through which nixed my fabulous weekend of grilling, and shortened our stay at the school family picnic, too.
What we ended up eating was not so fabulous, can you say take out pizza and burritos? They were delicious, but probably not very healthy. I vow to do better this week and stick to my meal plan. I watched the weather before writing our meal plan and learned that it isn’t going to be nice again until Thursday. Here’s what we’re going to eat:
Monday: Homemade chicken pot pie (I roasted an organic bird last night, and we’ve got leftovers galore!)
Tuesday: Leftover pot pie
Wednesday: Scallops Mascarpone
Thursday: Jamaican Grilled Chicken Breasts with asparagus and couscous II’m going to use my wing marinade, you can find the recipe here.)
Friday: Boneless Buffalo Chicken Bites (Kelly shared this recipe as my Featured Guest Blogger last week!)
Saturday: Turkey Reubens
Sunday: It’s Father’s Day…no cooking for me. We’re going out to eat!!
