Remember last week how I bragged about the sun shining? Yeah, it’s snowing again. I’m kinda over it. I feel like we’ve had snow every other day since January 1. I’m tired of being inside; tired of the cold weather; tired of looking at the giant gray cloud. Despite the bone chilling temps, we are doing a fabulous job of sticking with our menu plan. Here’s to another successful week – right?!
Monday – If you follow me on Instagram, you know that I was cracking open a beer this morning before 8 because we’re having Turkey Chili for dinner.
Tuesday – Grilled Chicken with caramelized onions and mushrooms. We’re obsessed with caramelized onions lately.
Wednesday – Leftover chili
Thursday – Homemade pizza with spinach, ricotta, caramelized onions and more!
Friday – The Texan is headed out on a rugby adventure to Savannah. I’m excited that he’s going to have a guys weekend. Especially since that means The Boy and I can have breakfast for dinner! I’m thinking waffles or pancakes tonight!
When planning our weekly menu, I don’t include lunch items as we often eat salads, leftovers, smoothies, or make quesadillas. This week, I want to add a few new items to the rotation and am thinking of going vegan during the day. I always feel more energized when I’m more focused on a plant based diet.

I love breakfast for dinner, definitely a favorite here and thankfully my husband is okay with it sometimes too so I can get away with it 🙂
