We did a decent job of sticking to our meal plan last week. In a moment of weakness, we ordered Thai take out on Saturday night. And, the lasagna became baked ziti because lasagna sheets were out of stock at Trader Joe’s. I’ve realized over the last few weeks of sticking to the meal plan, that I need to schedule a night, or two, for leftovers. Sometimes we have just too much left of a particular dish – or it won’t pack well – and serving it for lunch just doesn’t work. I’m kept that in mind while I planned this week’s menu.
Monday: Crock Pot Orange Chicken {I’m going to modify this recipe from Six Sister’s Stuff to make it a spicier!}
Tuesday: Leftover Baked Ziti {we had this on Sunday}
Wednesday: Crock Pot Chili
Thursday: Leftovers or Calzones
Friday: Spicy Shrimp Stir Fry {Lacee’s recipe…again! Love it.}
Saturday: Chicken Enchiladas {skipped last week}
Sunday: Roasted Chicken
