How have you been doing sticking with your menu plan? We’ve been doing great at our house. I do find, however, that I am switching meals to different days. Adds some excitement to my day in a weird way. I’ve also been trying to reduce our waste. When I think back to the summer, I feel like we wasted a lot of food. I’m not sure why. Maybe because the weather was nicer and I wasn’t in the house thinking about getting meals ready?
Over the last two weeks or so, I’ve really focused on portion sizes when preparing my meals. We’re not big fans of leftovers in our family…in fact, there are few things that I’ll actually eat for a second time. If I can disguise it, or transform it into something else, well, that’s an entirely different story. Last week, the night that I planned for leftovers turned into take out because we didn’t have any to eat! Anyhoo…here’s what we’re having this week:
Monday: Crock Pot Chicken Marsala
Tuesday: Taco Night
Wednesday: Crock Pot Peach-Whiskey Barbecue Chicken
Thursday: Pan-Seared Scallops with Asparagus
Friday: Chicken Tetrazzini
Saturday: Costume Party – dinner out!
Sunday: Roasted Chicken
The one thing that appropriate portioning is presenting me a problem with is lunch for The Texan. He doesn’t mind having leftovers or sandwiches for lunch, but I can tell he’s getting bored. What are some easy lunch recipes that travel well for my hard working man?

Oh, I LOVE leftovers. Whenever we have tacos, I always make a little extra “meat” and save it for taco casserole or nachos for dinner the next day–I agree with you, if you’re not big on leftovers, transforming things can make them a little more appealing.
About the only thing I like leftover are pizza and lasagna…and Chinese/Thai food, too! I hate feeling like I’m eating the same thing every day.
