Yes, today is Tuesday. No need to check your calendar. It’s me that’s falling behind. I don’t know about you, but I could use an extra day between Sunday and Monday. Sunday nights are filled with unpacking from the beach, laundry, and quite frankly, pure exhaustion. I guess that means we’re having too much fun.
When Monday rolls around, I’m scrambling to find something for dinner. Last night, I had cheese, crackers, turkey pepperoni, and grapes. It was delicious. That’s a perfect summer meal for meal, but it simply doesn’t cut it for The Texan. I ended up grilling him chicken. {Which he’s probably tired of eating, but c’est la vie!}
The menu plan for the rest of the week is going to be simple. The first step is to eat what is in the freezer. Ever wonder why you’re hoarding food in the freezer? Buy, buy, buy. Because we forget what’s in there. We have one package of chicken drumsticks – which no one likes, so a great recipe suggestion would be helpful!! – and some ground turkey. Once we’ve eaten that, then I’ll head to the store with a master plan. For now, here’s what we’re eating this week:
Monday: Cheese and cracker plate. Also known as “Moms Favorite Meal” and is typically served with a glass of chilled wine, though I had a Ginger Shandy last night.
Tuesday: Taco Tuesday. Because Tuesday wouldn’t be Tuesday without Tacos!
Wednesday: The Boy and I are headed to Fenway Park with his best pal from t-ball {and his super fun mom!}. I guess it’ll be Fenway Fare for us; and maybe a burrito for The Texan.
Thursday: We need to eat those dreaded Chicken Drumsticks. But, how? How do you prepare them? I bought them for the cookout we had a few weeks ago, but we ended up not needing to cook them. I’ll just whip up a batch of my red, white and blue potato salad to serve with them. This potato salad makes everything taste great!
Friday: Pizza. It’s a tradition in our family to have pizza on Friday nights. While sometimes we make it ourselves, in the summer I don’t want to heat up our kitchen so we order from our local Whole Foods Market. They’re competitively priced with the local pizza shops, but I know they ingredients are much higher quality.
Saturday: Grilled seafood. Maybe Lobster. Maybe Fish. Something from sea, that’s for me!
Sunday: Beach leftovers. We get home from the beach around 7PM. Who wants to start cooking after unloading all of our stuff? Not me! So, we typically grill the leftover burgers, hot dogs, or chicken. Whatever we took to the beach becomes dinner.
