I did a decent job sticking to our meal plan last week. One snafu yesterday, when the chicken that I planned to roast wasn’t defrosted. I don’t like to roast frozen birds, takes too long and often leads to dried out meat. We skipped the Turkey Tetrazini, but that was the fault of Mother Nature. It was too windy and cold to go to the store for the turkey.
Monday: Lobster Ravioli
Tuesday: Roasted Chicken with potatoes and asparagus
Wednesday: Creamy Chicken Enchiladas
Thursday: Pizza
Friday: Macaroni and Cheese
We’re going away for the weekend! YAY! No cooking and a mini-vacation. Watch out Portland, here we come!
I’m still on the hunt for more crock pot recipes, as I write this I won’t be using my crock pot at all this week. But, most of the meals that I’m planning are fairly easy. Don’t you just love preparing meals that require minimal effort, but taste like you slaved over them?!
