Woot! Woot! This is my last menu plan post before vacation! I’m having a hard time writing this as I’m busy over here doing the happy dance….and thinking about packing.
With The Texan and his rugby team moving their weekly practice sessions from Tuesday/Thursday to a crossfit session on Monday/Wednesday/Friday, I’ve been having a hard time planning three easy meals per week. Last week was only sort of successful, thanks mostly to late lunches and leftovers.
Monday: Garlic Baked Chicken with potatoes and asparagus
Tuesday: Penne with Spicy Chicken Sausage
Wednesday: Spicy Shrimp Stir Fry with Brown Rice (a variation on this recipe)
Thursday: Turkey Tacos
Friday: Clean out the Fridge Friday
What are your go-to meals for busy nights and times when the family does not eat at the same time?

I love the weekly menu plans too! I should start doing this so I can actually go shopping once a week instead of buying what I need just for dinner. We almost never eat at the same time here thanks to stupid work schedules. Our go-to meal is tacos. Quick, easy, and we make all the salsa here so somewhat healthy!
