As the song goes, I’m back in the saddle again.
Vacation is over and we’re settling back into our routine. I realized that having a weekly menu plan really is helpful. The last few days we haven’t had one, and I’ve felt disorganized and at a loss for what to prepare.
Monday: Slow-cooker Salsa Chicken
Tuesday: Lasagna or Baked Ziti
Wednesday: Oven-baked Chicken Fingers
Thursday: Spicy Shrimp Stir-Fry
Friday: Slow-cooker Roasted Chicken
Saturday: Homemade Chicken Pot Pie
Sunday: Chicken Enchiladas
It seems we’re having a bunch of chicken this week, hopefully it all won’t taste the same!
A few weeks ago, I received a new slow cooker that I won in a giveaway courtesy of Relish.com and In the Trenches of Mommyhood. Now that I’m back in the swing of cooking after our great vacation, I need some killer slow cooker recipes. If you have some, please share below! It’s really much bigger than we need, but I love it. I’ve used it a few times and it cooks much better than my old one. It has a timer and automatically switches to warm once the cooking is completed. Love it. But, I think I need a tiny one too, I found a recipe for crock-pot brownies and you make them in a 2-quart crock. Sounds good, eh?

I’m still going strong on my slow cooker of 10 years. Although admittedly I don’t use it much. I really need to start using it more but I always forget to thaw things the night before so it’s ready in the morning.
