Hello Friends! How are you coping with the time change? It has really done a number on me. We slept in this morning, yet I still feel like the day is flying by. I sat down at 3 o’clock to start writing this post; after telling The Texan that it felt like noon!

It’s full of great information, and shows you how I plan my family’s weekly menu. This week, I am particularly excited to menu plan because I’m only planning four dinners! The Texan started Dr. Oz’s 3-day Detox Cleanse this morning, so he’s on a blender menu plan for three days. Dinner for The Boy and I will be breakfast items, salads, or maybe some homemade soup; I have a few Ziploc bags of my Portuguese Kale Soup in the freezer.
Our family’s menu plan will kick off with dinner on Thursday (how cool is that? I could get used to this!)
Thursday – Chicken Fajitas
Friday – Garlic Baked Chicken with broccoli slaw
Saturday – Mushroom and Spinach Stuffed Shells
Sunday – T BLAT Salad {Turkey Bacon, Lettuce, Avocado, and Tomato Salad}
When I make the stuffed shells, I’m going to make an extra pan to pop in the freezer for another meal. I like to do that with most Italian meals, especially my Vegetarian Lasagna. It’s such a time saver, and great to know that you have something on hand “just in case”! Do you have a favorite meal that you like to freeze?

Love your menu! I used to do Menu Plan Monday way back when. I should totally start again, because I have the hardest time coming up with meal ideas. Thanks for the reminder!

I love fajitas! I make them with just veggies. I keep meaning to make them in the oven like I saw on Pinterest… that would make them tasty and easy!

Can I come over for dinner? I love veggie fajitas – sadly, The Texan needs to have some “meat” at every meal. I suppose I could make the veggies in their own pan…but coming to your house would be easier!
