Take a look out your window, the sun is shining again…
Did you know that I’m not musically inclined? That’s why I stopped trying to re-write It’s Beginning to Look A Lot Like Christmas into a springtime song! Our weather took a positive turn on Friday and we’ve enjoyed warmer temps and lots of sunshine! Hooray!
The sunny skies and warmer temps are great for healthy meals on the grill and inspire several ideas for salads as meals. Of course, I haven’t seen the forecast for the week yet, keep your fingers crossed that the weather holds out for what’s on my menu plan!
Monday – Leftover chicken with garden salad
Tuesday – Jamaican Grilled Chicken Wings and onion rings
Wednesday – Mahi Mahi with caesar salad
Thursday – YOYO night! {Your On Your Own, it’s rugby night!}
Friday – Shrimp Fajitas
Saturday – Herb Marinated Chicken with Sweet Potatoes
Sunday – Salmon Burgers and Salad

Your menu sounds delicious! and very healthy!! We do a lot of left overs on weekenight so your menu is very impressive!!

I am not a big fan of leftovers, so I try to cook “just enough” each night. Sometimes, it’s inevitable, though. Tonight’s meal was made using leftover chicken from a chicken I roasted on Saturday night.
