Last week, it was super easy to stick to our menu plan – I only cooked two “real” meals! Hooray for easy weeks. I love taking a break from cooking and using up the ingredients we have on hand. It’s a great way to clean out your fridge before things start spoiling.
Monday – Girls night out for me! Steak for The Texan, and if I have to guess, The Boy will choose PB&J.
Tuesday – Grilled Mahi Mahi with The Best Cole Slaw ever
Wednesday – Extra spicy Buffalo Chicken Lettuce Wraps
Thursday – Y.O.Y.O. Rugby night!
Friday – Paleo Pad Thai
Saturday – Grilling steaks or burgers
Sunday – Paleo Chicken Pot Pie
Many of these recipes are new-to-me. I’ll be testing them and tweaking them and eventually sharing them with y’all! Exciting, isn’t it?

I love that you post this. Since I know you have a Paleo Texan to cook for… I look forward ot see what you are preparing that I can use as well.
I am a huge lover of all things cabbage and you can bet your last cent that I am making that coleslaw this week… right after I finish the stuff I made yesterday.

I post this for me as much as I post it for y’all. It really helps me stay organized and ensure that my family is eating well.
If you do make the cole slaw, be sure to skip the blue cheese to stay on Paleo. I’ve been making it that way and it still tastes good, though sometimes I sneak a bit onto my plate.
Right now, I’m playing with a few Pad Thai recipes. So far, the best “noodle” has come from zucchini. Once I get it right, I’ll share the full recipe with you. Pad Thai is one of my favorites, too, and when The Texan went Paleo I knew that I had to find a replacement fast!

Yep, saw the Bleu Cheese – that’s a natural habit to just omit from my version.
Also the peanut sauce on the Pad Thai… oh, I sure hope you find a nice alternative.
