Whoa! Can you believe that Memorial Day weekend is this weekend? Menu planning is always easier when there is a holiday throw in. I’m not sure about where you live, but on Cape Cod, Memorial Day is the unofficial start to summer. People start coming back from their winter homes in Florida and Arizona, most restaurants are finally open, and the weather usually warms up. It’s also a weekend full of grilling, celebrating, and family time.
It’s important to remember what Memorial Day weekend is supposed to symbolize – it’s a time when we remember those who lost their lives in active military service. So, while you’re enjoying your cookouts, please remember the families who are missing someone at their cookout.
Having said that, here’s what’s on our menu plan this week:
Monday – YOYO {rugby night means leftovers, cereal, or breakfast for dinner!}
Tuesday – Cod fish with sweet potato fries
Wednesday – Turkey Pot Sticker Burgers with cole slaw
Thursday – YOYO {yep, rugby night again!}
Friday – Homemade Crab Cakes with mixed greens
Saturday – Steaks and fish on the grill
Sunday – Shrimp Fajitas

I’ll probably be doing some grilling this weekend, for sure, but I haven’t decided on whether to throw a party in conjunction or not. I guess I should decide soon, huh?!

I make the cole slaw regularly – but now that The Texan is eating Paleo, I have to leave out the blue cheese. It’s still good, just not as good.
Cod has quickly become one of my favorite dinner foods. I’ve been making it every other week for the past few months. Next week I’ll be trying to make grain-free, dairy-free, egg-less fish sticks. Hope they turn out well 🙂
I love cod, but it’s not my husband’s favorite. I don’t get to make it that much. I’ll be looking for your fancy fish stick recipe though – I think my son would like it!
I love fajitas… even had them last night. I make them with just veggies but the shrimp ones sound great for sea foods eaters!
