Hello July!
Can you believe it? July already. I love July. The Boy will celebrate another birthday, and the long days are great for outdoor activities and creating memories to last a lifetime. We’ve been working to complete items on our summer bucket list, and that cut into our menu plan for last week. Oops! Too many late nights outside. Don’t you love the summer time?
This week, I am making a fairly easy menu plan. I want all of our meals to come together in under 30 minutes, yet be full of flavor. To create these types of menus, sometimes a little help from the grocer is necessary. I purchased a bag of crinkle cut sweet potatoes that we’ll have with grilled chicken breasts. I could have cut the sweet potatoes myself, but that’s a lot of work that I don’t want to do.
Here’s what’s on our menu plan this week:
Monday – Shrimp Stir Fry {this one was skipped last week}
Tuesday – Grilled Marinated Chicken Breasts with Sweet Potato fries
Wednesday – Burgers on the grill with the best cole slaw
Thursday – Celebrating our nation’s Independence and my independence from cooking! No menu plan for today, we’ll take it easy and grill something.
Friday – Grilled Mahi Mahi with salad
Saturday – Steaks on the grill. Don’t you love a nice Tuna Steak grilled? Mmmmm….I do.
Sunday – Burgers on the grill. It’s summer. You can’t have too many burgers or hot dogs. We cook Angus Beef or Turkey burgers. The Boy is obsessed with hot dogs these days, so we’ve been serving him all beef or turkey – and always nitrate/nitrate free.

Grilled Mahi Mahi sounds divine! I always forget about it as an option (as opposed to salmon and tilapia)…thanks for the reminder 😉
