It’s hot, hot, hot and oh so humid here on Cape Cod. This weather reminds me of living in Florida. At least living there, we saw some relief in the form of daily afternoon rain showers. Here, not so much. I am so thankful that our air conditioner is repaired and running well. As much as I love fresh air, I hate to be hot and sticky.
And because of that, I rarely use my oven in the summer months. And this week is no exception. As I worked on this week’s menu plan, I tried to keep that in mind. Here’s what’s cooking at our house, no oven required:
Monday – Grilled Mahi Mahi with Cole Slaw
Tuesday – Grilled, marinaded chicken tenders over salad greens
Wednesday – Grilled seafood with vegetables
Thursday – Leftover buffet, sandwiches, or burgers on the grill.
Friday – I love to have pizza on Friday evenings. To me, that signals the end of the week. However, with The Texan dedicated to strict paleo, pizza just isn’t happening. Instead, I’ll roast some veggies and we’ll grill chicken wings. Still eating with your hands, hopefully that will remind me that the week has come to an end.
Saturday – My mom is coming for another visit! I’m going to cook an entire chicken in the crock pot and serve it with salad and veggies. Or maybe with a cold pasta salad.
Sunday – Grilled fish, veggies, and salad.
