I’m a little behind in working on my menu plan for this week. Generally, I spend some time on Sunday working on it. I use magazines and websites, like I mentioned in my menu planning tips post. Yesterday, however, was a busy day spent painting our stairway. Oh my aching back.
So, before I sat down to write this, I took a quick look at some of my favorite food bloggers and bloggers who share food-related stuff, like weekly menu plans. This week, Emily from Random Recycling posted about the Grilled Pesto Chicken and Tomato Kebabs she’s going to serve to her family. Guess what?! My family is going to have them too. Maybe we should just head to Emily’s for dinner that night?
It’s tough to feel like you’re not eating the same food every day. While menu planning cuts down on this, I still feel bored with what we’re eating. With The Boy off from camp and school until after Labor Day, we’ll have lots of time to check out a few new-to-us farmer’s markets and hopefully find some inspiration there. Until then, here’s what we’re eating:
Monday – The Texan has a meeting tonight, so The Boy and I will have turkey hot dogs on the grill. I love how the Trader Joe’s Turkey Dogs are just a bit longer than the bun. There is nothing worse than a hot dog too short for the bun. Don’t you agree?
Tuesday – Rugby night! I like to make things that are easy and don’t taste too bad reheated. Tonight, we’ll have Turkey Tacos (we skipped those last week in favor of grilled fish!)
Wednesday – Grilled Pesto Chicken and Tomato Kebabs Is it wrong that I wish today were Wednesday?!
Thursday – I’m going to toss a whole Chicken in the crock pot. We’ll eat it with sweet potato fries (one of my all time favorite things!) and maybe some of the best cole slaw!
Friday – It seems that our new favorite meal to have on Friday nights are chicken wings. It’s not too different from having pizza every Friday, I suppose. I’m going to make wings again this week. I’m on the fence about doing a Jamaican marinade or a garlic buffalo. I love both. Both are hot and spicy, yet very different on the flavor spectrum. And you know what? I’m going to serve sweet potato fries again. You can never have too many sweet potato fries…or chicken wings.
Saturday – We’ll whip up a fancy salad using the leftover chicken from Thursday night. It will be quick and easy and help to clean out the fridge. I love meals that do that.
Sunday – Leftovers! My in-laws arrive tomorrow (!) and I don’t want to have a bunch of half eaten items in the fridge. Whatever is in there, is what you get for dinner.
