I am happy to report that we survived the first week of our fall schedule. With rugby and back to school all in the same week, I always feel a little stressed and disorganized. This year, we made it through unscathed. Which is more than I can say for the Texas Longhorns football team – did you watch the game on Saturday? EEEEK, it was horrible.
Anyhow, I sat down earlier and took the time to plan our menu for this week – and even a few days into next week. I feel like a rock star when I have a menu plan ready for more than just the current week.
Monday – Crock Pot Chicken. Yesterday, I cooked a whole chicken in the crock pot. And then we decided to have pizza. Because the Dallas Cowboys were playing. And it was delicious…and the Cowboys won. Now, I’m not saying that because we had pizza they won, but you never know. Pizza goes better with football than chicken anyhow.
Tuesday – Buffalo Chicken Lettuce Wraps. Yum. My mouth watered a bit as I typed that. I’m going to use the leftover chicken to make these. Mmmmm good!
Wednesday – Shrimp Stirfry. It’s been a while since we’ve had a good stir fry. I’m going to use crushed red pepper and sesame oil with lots and lots of veggies.
Thursday – It’s a rugby night, and while The Texan is a huge fan of YOYO (which is our abbreviation for You’re On Your Own), dining out frequently is so costly. I’d rather put the money into the vacation fund! So, I’m going to make a Chicken Salad. Probably with an avocado salsa-y dressing. It’ll be something The Texan can eat when he gets home without having to reheat anything. He hates to do that.
Friday – Turkey Chili. Maybe? The vote is still out on Friday night’s meal.
Saturday – Wings. You’ll see a theme throughout the College Football season. We’ll eat wings almost every Saturday. If it’s not wings, it’ll be chili. Maybe this week, we’ll have both!
Sunday – Homemade pizza. Yep. It’s that good that you should make it often. We like ours with pesto, chicken, spinach, tomato, onion, and portobello mushrooms. How do you make yours?
