I have a confession. Last week’s menu plan was a huge FAILURE. It started on Monday and got worse as the week progressed. The only thing we did eat was the delicious paleo Shrimp Pad Thai that I was craving. My goal for this week…stay focused, quit being lazy, and eat good food. Delivery, while delicious, is not good food.
Monday – Jamaican Wings. These have been marinading since Saturday. They are going to be delicious. I’ll probably make sweet potato fries, too.
Tuesday – It’s my birthday. Did I mention that before? Yes, party party! Okay, not really. It is a Tuesday after all. And, I’m not 21 any more. The one thing I will not be doing is cooking dinner. And, I’m totally fine with having cereal as my birthday dinner.
Wednesday – Mahi Mahi with green beans. Because fall is quickly approaching, I want to enjoy grilling as much as possible. Mahi Mahi on the grill is super easy, you can have dinner on the table in under 20 minutes. Awesome.
Thursday – Paleo friendly chili. I’m going to make chili in our crock pot without beans, but with fun ingredients like onion, carrots, zucchini and mushrooms. This will be a first for me. Hopefully it will be delicious.
Friday – Back to the grill. Steak for The Texan and either chicken or fish for me. Or maybe we’ll have homemade pizza?
Saturday – The Texan has a rugby match off Cape, I’m not planning on making a big dinner, rather eating the leftover chili (and maybe pizza!)
Sunday – Pesto Marinated Chicken with vegetables.

Emily, I hope you have a great birthday today (Tuesday)! I have to do some grocery shopping this evening after picking up my oldest from Science camp. So we will eat fast food (blah) before going in so that we are not going in to the store hungry. I do have some ribs soaking up some rub right now. I totally forgot we had them in the freezer and pulled them out. Now to figure out how to fix them in my crockpot since I do not use the grill.
