I’m back to meal planning after a two week hiatus. Last week, we ate quick meals that I pulled together with little to no thought. Most of them tasted like I used little to no seasoning as well. A few weeks ago I was a guest blogging at Every Day Easy about how I menu plan. I meant to share this with you last week, but you remember what happened last weekend. {Note to self: consider meal planning two weeks in advance so help avert any obstacles.}
Last week, I purchased a new-to-me magazine called Recipe.com {Yes, after the website.}. Typically, I don’t purchase magazines at the check out, but the Fried Chicken pictured on the cover made my mouth water. I love fried chicken. We don’t cook it in our house because it is too messy, and not so healthy. {Confession: I buy every magazine that I see if it has a photograph of fried chicken on the cover. } The magazine is a well organized, compilation of recipes and this issue features 160 money-saving meals, too! If you have a smart phone, you can scan these little tags at the end of each recipe and download the recipe to your phone. How cool is that? Our meal plan for this week is taken from the pages of this magazine! {Yay, me! For trying a new recipe every night this week!} :
Monday: Chilly Veggie Pizza {Going to omit the olives and add something else}
Tuesday: Creamy Linguine with Zucchini {I’ll be adding either shrimp or grilled chicken to this recipe for The Texan}
Wednesday: Asian Chicken Slaw
Thursday: Mediterranean Shrimp {Omitting the olives for this one, too!}
Friday: 24-Hour Chicken Fiesta Salad
Saturday: Chili-Rubbed Tilapia with Asparagus & Lemon {I’ll be substituting the Tilapia for a local white fish, like cod. And I may swap the lemon for lime, too!}
Sunday: Shrimp Tacos {Tacos with green beans? I’m intrigued. Hopefully, my neighbor will have some fresh green beans from his garden for this recipe!!}

I’ve never heard of that magazine. I am SUCH a junkie when it comes to cooking magazines though, so I’m totally with you on that boat. I subscribe to a bunch but still, when I see one that looks good in the check out line, I feel compelled to buy it.
Minus the mayo, that Chilly Pizza sounds really good!
