Phew! What an amazing vacation week! Staycations can be a wonderful way to bond with your family and enjoy the activities in your community that you might miss out on regularly. Now that we’re back to reality, I’m back to menu planning. I’m keeping it simple this week, mostly because my brain is fried from all of the sun!
Monday: Take Out
Tuesday: Chicken Enchiladas
Wednesday: Grilled Fish, veggies and rice
Thursday: Turkey Reubens
Friday: Pizza
Saturday: Fend for yourself – The Texan has a rugby match, so it’ll just be me and The Boy. I’m thinking spaghetti?
Sunday: Roasted Turkey
I’ve decided to roast a turkey and make all of the appropriate sides, too, as a way to remember the American’s who lost their lives on 9/11. It’s weird, and I can’t explain why I feel like I should make a big turkey dinner, but I do. So, I will.

I have not thought about what we should be having on 9/11. Our family tries to stay as close a possible and since we are even more spread out this year. We will probably be on Skype most of the morning with all of our loved ones. New follower from the Monday Mingle.
