Ugh. Last week was a big ol’ FAIL in the menu plan department. If you follow me on Twitter, you probably saw me ranting about our lack of electricity on Tuesday. The lack of electricity caused us to have Take Out Tuesday, instead of those delicious Chicken Enchiladas I really wanted. But don’t fret, I moved those to Thursday instead. We had rain on Wednesday, and much cooler temperatures, too. It never got out of the low 60’s. Perfect weather for Homemade Chicken Pot Pie. Friday night we had a leftover feast, and grilled on Saturday because The Texan’s rugby match was moved to Sunday. The switch in his schedule – and the lack of fresh turkey’s at our local markets – caused us to have Sunday pizza instead of the beautiful feast I planned.
I’m hoping to do a better job of sticking to our meal plan this week. I really hate ordering take out, and I’m starting to burn on out pizza. It may be time to dig deep into my recipe vault and get out some Crock Pot meals, especially as the weather will be getting cooler. This week, we’ll try to have:
Monday: Roasted Chicken, veggies and rice
Tuesday: Turkey Taco Tuesday is back!
Wednesday: Creamy Linguine with Zucchini (To this recipe, I’ll add the leftover chicken from Monday night)
Thursday: Homemade Lobster Mac and Cheese (I’m going to follow my Three-cheese Macaroni and Cheese recipe, and add lobster too it! Easy peasy!)
Friday: Homemade Vegetable Lasagna
Saturday: Happy Birthday to me! That means dinner out! Woo-hoo!
Sunday: Turkey Chili

I don’t think I could EVER burn out on pizza. 🙂
The crock pot is definitely a good way to stick to a meal plan–it’s usually around 4-5pm that I make the decision to get take-out instead, so if dinner’s already cooking, that kind of removes the option for me.
I’ve been thinking what to cook tomorrow, so thank you
for giving me an idea on what to cook.
