We’ve had a sneak peak of fall weather this weekend, yippie! I love the fall, but know that it means winter will be knocking on our door soon. Cooler weather also means heartier meals that stick to your bones. Many of those meals can be prepared using the crockpot which saves your time for more important things, like playing with Thomas the Train {and many of his friends, too!} I dusted off the crockpot for some knock-your-socks-off Turkey Chili yesterday, and was reminded how much I love to use my crockpot.
This week’s menu plan is an easy one. The last few weeks I’ve been planning a week’s worth of tasty meals, but only cooking about half of them. That practice is wasteful, and can lead to an increased waistline if it keeps up for a long time. I’m {hopefully} sticking to my plan this week because everything I’ve planned is easy and takes just a few minutes to prepare.
Monday – Easy Tortellini Soup
Tuesday – Crock Pot Chicken Fajitas
Wednesday – Baked Chicken Parm with pasta
Thursday – Chicken Fajita Quesadillas (using the leftovers from Tuesday)
Friday – Spicy Shrimp Stir-fry with Brown Rice ( this is a variation on this recipe)
Saturday – The Texan is away for a Rugby match (wish him luck!), The Boy and I will probably have breakfast for dinner. Yum! I love waffles and pancakes for dinner.
Sunday – Roasted Chicken or…another crockpot recipe

I love doing breakfast for dinner. It feels so subversive, right? I need to break out my slow cooker too–I always forget about it, but I LOVE using it.
