Did I tell you that we purchased a new grill for the beach last week? Well, we did. And, we’ve been breaking it in. We’ve been grilling almost every day, which means our menu plan from last week wasn’t followed to a tee. I’m not worried about deviating from plan because we’ve been having fresh, delicious meals. This week, I’ve tried to plan a few meals around the grill and some that can be prepared inside – just in case our weather isn’t as glorious as it’s currently forecast!
Monday: Grilled Chicken with Mashed Cauliflower
Tuesday: Fire-grilled shrimp with broccoli slaw
Wednesday: Grilled Mahi Mahi with salad greens
Thursday: YoYo! {You’re On Your Own – it’s rugby night!}
Friday: Buffalo Chicken Lettuce Wraps. The Texan and I both love buffalo chicken pizza, and with our recommitment to healthy living we’re not eating pizza. I thought lettuce wraps would be fun, quick, and a great substitution for pizza.
Saturday: Steaks on the grill – I’ll have a swordfish steak and The Texan will have buffalo.
Sunday: Happy Cinco de Mayo! We’ll be having Nor Cal Margaritas and Chicken and Avocado Tostadas. If I can’t find a recipe for Paleo Tostadas, we’ll be having Fajitas instead!
