Last week’s Pumpkin Risotto recipe was a big hit in our home and out. I gave my mom some of the leftovers the following day – along with some fancy Trader Joe’s Organic Dried Cranberries – and she was super impressed. She’ll be knocking on the door the next time I serve it, I’m sure.
Sadly, I don’t have it together to share a fancy recipe or fun craft with you this week. Between the three days of insulation work, the two days to clean up after them, preparing for our vacation and being sick, I haven’t been motivated or had the time.
Instead I’ll share a tasty cocktail that I enjoyed a few weeks ago while The Texan and I snuck away to Portland, Maine for a quiet weekend getaway.
Tasty Cocktail Recipe
1 part Kahlua (Not the cheap knock off stuff, please. Treat yourself. Only buy the knock off if you are using it to bake.)
1 part Smirnoff Whipped Cream Vodka (This is a new flavor. Who knows what’s it in to give it the whipped cream flavor, but it was tasty!)
Grab your stainless steel shaker, add ice and liquors. Shake, and strain into a martini glass. YUM! More than yum. This drink was delicious. I would make another one right now, but it’s a little early in the day to start boozing.
